  • 3 cup sweet potatoes baked & mashed
  • 1 cup light brown sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 1/2 cup whole milk
  • 1/2 cup melted real butter
  • 1/2 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup melted real butter
  • 1 cup chopped pecans
  • Steps

  • Combine first six items
  • Pour into a buttered 2 QT baking dish.
  • Mix topping ingredients together
  • Sprinkle over top
  • Bake at 350° for 30-40 minutes

  • 2 lb Cod (preferably filleted)
  • 1/2 cup Black Olives – pitted
  • 3/4 cup White Wine (preferably dry)
  • 1 large onion, chopped
  • 3/4 cup cherry tomatoes, quartered
  • 1 lemon, zested and juiced
  • 2 clove garlic, minced
  • 3 large sweet potatoes
  • 500 grams long green beans
  • 1/4 cup sesame seeds
  • 1/4 cup fresh basil leaves
  • Steps

  • Preheat oven to 400 degress. Chop onion, mince garlic, chop tomatoes. Cut the tops and bottoms of the long green beans.
  • Peel and chop up sweet potato. Place in a large pot, cover with water, add salt and boil. Cook until soft (about 45 mins).
  • In a small skillet saute onion until translucent and add garlic. Cook until the garlic is fragrent (2 mins). Add the tomato and some basil leaves. Stir and turn heat down. Let cook for 10 mins.
  • Heat a wok or skillet and add a tbsp of oil. When oil is heated, add the garlic and cook for 2 mins. Add the long green beans and the sesame seeds. Cook for about 40 minutes until crispy and cooked.
  • Place the cod in a large baking dish. Add the wine. Add the olives. Add the tomatoes and some of the onions around the cod. Add the lemon juice and the zest. Add salt and pepper and the rest if the basil leaves. Cook for 20 minutes until the fish is flaky.
  • While the fish is cooking, drain the sweet potatoes and mash them. Add fresh parsely, garlic, salt and pepper and a dash of ginger. Keep mashing the potatoes until smooth.
  • On a plate place a some mashed sweet potato. Place some cod over the sweet potato with olives and tomatoes. Add some long green beans on top. Serve.

  • 2 big sweet potato
  • 2 stalks spring onion (chop finely)
  • 2 cubed unsalted butter
  • 2 garlic (chopped)
  • Baby spinach
  • Grated cheese (mozzarella/ cheddar)
  • Grated parmesan cheese
  • 2 tbsp cooking cream
  • Black pepper
  • Olive oil
  • Salt
  • Steps

  • Preheat oven 180°C / 350°F
  • Put sweet potato in baking dish, completely coat in oil & bake for 60 mins
  • Heat up the pan,add butter,minced garlic, baby spinach & chopped spring onion. Stir for 30 seconds Change
  • Transfer cooked baby spinach to mixing bowl. Let cool down
  • Once cool,add the cream, salt,black pepper, grated parmesan cheese
  • Remove sweet potatoes once cooked. Change
  • Slice in to half,leave it to cool for 10 mins. Scoop out the flesh, add to mixing bowl together with spinach. Change
  • Stir the flesh & baby spinach till mix well Change
  • Fill the sweet potato skin Change
  • Spread the top with grated mozzarella / cheddar cheese Change
  • Bake for 15 – 20 mins at 180°C / 350°F Change
  • After 15-20 mins, take it out, leave to cool for 10 mins Change
  • Transfer to serving dish & spread some chopped parsley Change

  • Steps

    60 mins

  • Preheat oven to 350°F
  • Wash sweet potatoes and poke holes in it with fork. Wrap in foil with a little butter.
  • Put in oven and bake at 350 for 1 hour until soft.
  • To serve, put extra butter, brown sugar, nutmeg and cinnamon on sweet potato to taste.
