Chicken carbonara penne pasta

Ingredients

  • 2 Chicken breasts
  • 6 slices bacon
  • 1 tablespoon olive oil
  • 6 cloves garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 12 oz penne pasta
  • 3 cups water
  • 1 1/4 cup parmesan cheese
  • 2 eggs
  • 1/2 cup sweet corn/green peas
  • parsley (for garish)

  • Mix salt pepper and paprika and season both sides of chicken breasts. Dice bacon and mince garlic.
  • Preheat cast iron skillet on high flame, reduce to medium flame then add oil
  • Cook both sides of the chicken until done. An internal temperature of 165F is ideal. Change
  • Cook the bacon until crispy then add garlic and cook until fragrant. Change
  • Remove the bacon, garlic and bacon grease from the pan.
  • Add the water to the pan and cook pasta on medium flame for 10 minutes. Then reduce to a low flame. Change
  • Combine the two eggs and parmesan cheese then immediately add to the pasta. Ensure to constantly stir to evenly coat pasta with the sauce and to prevent it from clumping/scrambling.
  • While stirring, add chicken, bacon and garlic, and sweet corn or green peas. Garnish with parsley and serve hot.

    Ingredients

  • 300 g Chicken thigh(cut into pieces)
  • 1 onion(sliced)
  • 1 pack mushrooms(sliced)
  • 1 broccoli(boiled)
  • 2 potatoes(boiled)
  • 60 g macaroni or penne
  • 1 canned or homemade white sauce(300g)
  • 1/2 cup breadcrumbs
  • 5 Tbs grated cheese

  • In a pot of boiling salted water, cook the macaroni, and drain.
  • Preseason the chicken with salt and pepper.
  • Heat a pan, put 1 Tbs of oil or butter, sautee the chicken. Once they turn white, add onion and mushrooms, stir them together until onions become translucent. (add white wine if you like)
  • Add white sauce, boiled macaroni, broccoli and potato into the pan, heat them over low heat until they are nicely mixed.
  • Put in a casserole or a gratin dish, top it with breadcrumbs and grated cheese.
  • Grill or bake in the oven until browned. About 10 minutes when grilled, 15 minutes when baked in the 250℃ oven. Done.

    Ingredients

  • 1 box fettucine noodles
  • 2 large chicken breast
  • 2 slice uncooked bacon diced
  • 2 clove garlic chopped
  • 1 tbsp prepared pesto
  • 1 cup shredded parmasean cheese
  • 2 eggs beaten
  • 1 salt and pepper to taste
  • 1 olive oil
  • Steps

  • Season chicken breast to your liking (I like to use cajun season in addition to salt and pepper) cook in a saute pan with alittle olive oil until they cooked through
  • Remove chicken and let rest
  • Cook pasta according to package directions (reserve 1/4 cup of the cooking liquid once pasta in finished) drain and set aside
  • In unclean sautee pan used to cook chicken add bacon
  • While the bacon is cooking in a bowl combine eggs, parmasean cheese, pesto, and a dash of salt and pepper and whisk together…set aside
  • Once the bacon has cooked through add garlic and saute
  • add reserved pasta water and simmer for a second then toss pasta along with the bacon and garlic
  • Remove from heat and add egg mixture….toss thouroughly…check seasonjng
  • Add 1tsp of butter for richness (optional)
  • Slice chicken breast and toss with pasta then sprinkle additional parmasean as needed

  • 5 ounces chicken tenderloin (2 pieces)
  • 1/2 ounce chopped prosciutto ham
  • 2 ounces cooked red lentil penne
  • 1 ounce chopped baby Bella mushrooms
  • 1 ounce chopped baby spinach
