Creamy Lemon Chicken

2-3 boneless, skinless chicken breasts
1/2 tsp salt and pepper
1/3 cup salted butter
1 (8 oz) package mushrooms, sliced or 1 (4oz) can mushrooms
1 cup heavy whipping cream
1/2 cup freshly squeezed lemon juice
2 cloves garlic
1 tbsp minced fresh chives
1/4 cup shredded parmesan cheese
Sprinkle chicken with the salt and pepper.
In a skillet over medium heat, melt the butter.
Add the chicken. Cook for 5 minutes, turn and cook for another 5 minutes more.
Add the mushrooms, cream, garlic and lemon juice. Turn the heat to medium-low and cover skillet. Simmer for 20 to 30 minutes, turning the chicken occasionally, until the chicken is cooked through and the juices run clear. Change
Sprinkle the chicken with the parmesan and chives before serving. ENJOY!!!
Lemon Pepper Chicken with a Blueberry Orange Wine Sauce

1 large pack fresh chicken strips
1/2 tablespoon Lemon pepper seasoning
1/8 teaspoon Black pepper
10 cloves garlic, minced
1 tablespoon parsley flakes
1 (6 ounce) package Blueberries
1/4 cup orange juice
1/4 cup White wine
1/2 teaspoon sugar
Please Note : Blueberry Sauce can easily be doubled ! ?
Rinse and pat dry your chicken strips……today I’m using a large pack of chicken breast that I cut into strips…… Change Change
Place strips in a large baking pan….. Change Change
Season strips with lemon pepper seasoning,black pepper,minced garlic and parsley flakes, stir chicken to evenly coat all strips……. Change Change Change
Bake in a 400 degree oven for 20 minutes……. Change Change
Meanwhile, as chicken is baking prepare your blueberry sauce by rinsing out your fresh blueberries…..Drain well and remove any stem pieces that might still be attached to your blueberries…… Change Change
Put cleaned blueberries into a small pot, then add the orange juice, white wine and sugar…… Change Change Change
Bring blueberries to a boil until liquid has been reduced…… Change Change Change
Remove blueberries from heat and set aside……By now your blueberry sauce should be slightly thickened, if it’s still a little runny boil for a few minutes more until it gets thick ! Change Change
Remove chicken strips from oven when done, place desired amount on plate, and pour blueberry sauce over chicken……. Change Change
Serve and enjoy !!!! Change

Lemon pepper seasoning
Wash off chicken place in foodie with black baking rack 1-2 cups of water pressure cook 23 mins on high with a quick release. Change
Remove black rack, Drain water from inter pot, place inter pot back, place back black rack, season chicken, air crisp for 10 mins, keeping an eye on it deepens on how crispy you like it I sometimes do 15 mins. (last picture is 5mins of cook time.) Change Change Change

Chicken with Mushrooms & Mustard

4 Chicken Breast Halves
2 tbs Flour (with salt and pepper added)
2 tbs Vegetable Oil
1 tbs Butter
1 Small Onion, chopped
1 cup Mushroom, thickly sliced
1 ⁄2 cup Light Cream
1 tbs Fresh Parsley, chopped (or use cilantro)
1 tbs Dijon Mustard
1 tbs Lemon Juice
Pound breasts until 1/4″ thick. Dredge in flour mixture.
Heat oil over medium heat. Add chicken and saute about 7 minutes, turning once. Remove and keep warm.
Add butter to frypan and increase heat to high. Add onion and mushrooms. Saute about 5 minutes. Reduce heat to low.
Add cream, parsley, mustard and lemon juice. Bring to a boil stirring constantly.
Add juices from chicken into cream mixture. Pour sauce over chicken and serve.
Easy Chicken Pesto Pasta

225 g Pasta (choice of your own) cooked
1 head garlic minced
1/2 cup olive oli
1 tbsp lemon juice
to taste salt and pepper
1/2 kg chicken breast sliced
extra oil for basting chicken
Set aside cooked pasta. Make pesto sauce. Mine is homemade. Mix fresh basil, grind garlic and peanut. Add olive oil salt and pepper. Blend together.
Marinate chicken breast with salt and pepper. Add oil then grill chicken. Set aside.
In a pan, put olive oil, saute’ garlic then add pesto sauce simmer a bit then put the pasta and chicken. Mix evenly add lemon juice. Salt and pepper to taste. Voila!!
