Heat fry pan with butter & evoo then place chicken gently & cook until golden brown
Another pan combine with honey, chili sauce & tomato paste and stir
Chop up leek, cremini mushrooms, red onion & heirloom baby tomatoes then mix in bowl
When chicken is cooked sprinkle kraft Italian mix cheese on top & melt
Serve with sauce & another sprinkle of parmesan cheese on top of chicken, salad & foccaccia bread
Easy parm encrusted chicken breast

2 boneless skinless chicken breast
3-4 tablespoons mayonnaise
1/4-1/3 cup parmesan cheese
First, I never measure my ingredients…..
Coat chicken with mayo
Then coat with parm
Place in uncovered baking dish in preheated oven at 375 degrees for 40 minutes.(pat extra cheese on top of breasts) I usually let it rest for 5 minutes.
You will have to judge baking time if you have smaller breasts. Enjoy.

1 lb. ground chicken
1/2 cup breadcrumbs
1/4 cup freshly grated parmesan cheese
1 large egg
2 tsp. dried parsley
1/2 tsp. each dried basil, salt, garlic powder, onion powder
1/4 tsp. pepper
2 tbsp. olive oil
2 cups marinara sauce (homemade or storebought)
1/2 cup shredded mozzarella cheese
In a large bowl, mix together the ground chicken, breadcrumbs, egg, parmesan cheese and seasonings. Form the mixture into 4 evenly sized patties. Change
Heat the olive oil in a large, deep skillet (one with a tight-fitting lid) over medium high heat. Once the oil is hot, add the patties to the skillet. Let them cook until golden on the bottoms, about 4-5 minutes. Then flip them. Lower the heat down to medium and add the marinara to the skillet all around the patties. Sprinkle 2 tbsp. of mozzarella over each patty, then place the lid on and let this cook until the chicken is completely cooked through, about 10-12 additional minutes. Change
That’s it! If serving on buns, then spoon some of the extra marinara over the bottom bun before placing the patty on it.
