Breaded Parm Chicken

  • 1 lb chicken strips
  • 2 heaping tbsp mayo
  • 1/2 cup shredded parmesan
  • 1 cup breadcrumbs
  • 2 tsp garlic powder
  • 1 tsp seasoning salt
  • few twists of cracked pepper
  • Steps

  • In a bowl, mix mayo, Parmesan, and seasonings
  • In another bowl add breadcrumbs
  • First roll chicken in mayo mixture, then roll in breadcrumbs
  • Place on a sheet pan that’s been lightly oiled, or sprayed with cooking spray
  • Cook at 425 for about 30 mins, until chicken is cooked
  • BAM!! Easy. Way too easy.

  • Butterflied chicken breast flattened
  • Eggs
  • Flour
  • Homemade bread crumbs
  • Salt & pepper
  • Honey
  • Tomato paste
  • Chili sauce
  • Parmesan cheese
  • Kraft Italian mix cheese
  • Red onion
  • Leek
  • Cremini mushrooms
  • Heirloom baby tomatoes
  • Foccaccia bread
  • Steps

  • Coat chicken in flour (salt & peppered w/ parmesan cheese) beaten eggs, & bread crumbs
  • Heat fry pan with butter & evoo then place chicken gently & cook until golden brown
  • Another pan combine with honey, chili sauce & tomato paste and stir
  • Chop up leek, cremini mushrooms, red onion & heirloom baby tomatoes then mix in bowl
  • When chicken is cooked sprinkle kraft Italian mix cheese on top & melt
  • Serve with sauce & another sprinkle of parmesan cheese on top of chicken, salad & foccaccia bread

  • 2 boneless skinless chicken breast
  • 3-4 tablespoons mayonnaise
  • 1/4-1/3 cup parmesan cheese
  • Steps

    40 minutes

  • First, I never measure my ingredients…..
  • Coat chicken with mayo
  • Then coat with parm
  • Place in uncovered baking dish in preheated oven at 375 degrees for 40 minutes.(pat extra cheese on top of breasts) I usually let it rest for 5 minutes.
  • You will have to judge baking time if you have smaller breasts. Enjoy.

  • 1 lb. ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup freshly grated parmesan cheese
  • 1 large egg
  • 2 tsp. dried parsley
  • 1/2 tsp. each dried basil, salt, garlic powder, onion powder
  • 1/4 tsp. pepper
  • 2 tbsp. olive oil
  • 2 cups marinara sauce (homemade or storebought)
  • 1/2 cup shredded mozzarella cheese
  • Steps

  • In a large bowl, mix together the ground chicken, breadcrumbs, egg, parmesan cheese and seasonings. Form the mixture into 4 evenly sized patties. Change
  • Heat the olive oil in a large, deep skillet (one with a tight-fitting lid) over medium high heat. Once the oil is hot, add the patties to the skillet. Let them cook until golden on the bottoms, about 4-5 minutes. Then flip them. Lower the heat down to medium and add the marinara to the skillet all around the patties. Sprinkle 2 tbsp. of mozzarella over each patty, then place the lid on and let this cook until the chicken is completely cooked through, about 10-12 additional minutes. Change
  • That’s it! If serving on buns, then spoon some of the extra marinara over the bottom bun before placing the patty on it.
