  • 300 grams rissoto rice
  • 1 onion
  • 1 corgette
  • 1 can sweetcorn
  • 1 red pepper
  • 1 mattesons sausage
  • 2 pork stock cubes
  • 1 clove garlic
  • Steps

    5 mins

  • preheat oven to 200c
  • using a food chopper chop all veg to roughly same size and place in pampered chef rectangle baker add pressed garlic, sliced sausage, rice and stock made up to instructions and stir together
  • put in oven for 30 mins or until rice is cooked adding water if required

  • Chicken Mixture
  • 4-5 cups cooked chicken, shredded
  • 1 small yellow onion, diced
  • 1 bell pepper, diced
  • 3 TSP minced garlic
  • 1 cup sour cream
  • 3 TBSP tomato paste
  • Juice from one lime
  • 1 cup chicken broth
  • Optional: A splash of white wine ?
  • 1 heaping TBSP oregano
  • 1 heaping TBSP cilantro
  • 1 minced jalapeno
  • 1 dash hot sauce
  • 1/3 cup uncooked white rice
  • 1 TBSP cumin
  • 4 TBSP chili powder
  • 1 TBSP ancho chili powder
  • 1 TSP paprika
  • 1/2 TSP cayenne pepper
  • Salt and pepper
  • Topping:
  • 2 cups shredded Colby jack cheese
  • 2 cups crushed tortilla chips, salted
  • Canola oil
  • 10-12 slices pickled jalapenos
  • Steps

  • Shred your cooked chicken into a medium mixing bowl. Saute the bell pepper, onion, jalapeno, and garlic until softened in 2 TBSP of canola oil. Add this to the chicken along with the remaining chicken mixture ingredients (making sure to salt and pepper everything as you go to taste). NOTE: Mixture should be fairly thick but with enough liquid to cook the rice, so just a little runny is ok!
  • Oil a 7 x 11 baking dish with canola oil. Add the chicken mixture. Then, layer the cheese (it should fully cover the chicken mix so add more cheese if needed), crushed tortilla chips, oil drizzle, and pickled jalapenos.
  • Bake at 375 uncovered for 25-30 minutes or until entire dish is very bubbly and golden brown along the edges.
  • Remove from oven and let stand 10-15 minutes before serving. Top servings with sliced black olives, fresh diced tomato, sour cream or whatever you like and Enjoy!! If it turns out bad, please feel free to blame me
  • PS-After writing this recipe out (that I normally keep stored in my head along with all my other recipes) I now know why I don’t typically follow recipes! There is too much reading!!

  • 2 1/2-3 cups cooked chicken (cut into small cubes)
  • 2 cups white rice, cooked
  • 1 can pinto beans, drained and rinsed
  • 1 1/2 cups frozen corn
  • 1 1/2 cups shredded cheddar cheese, separated in 1/2
  • 1/2 cup sour cream
  • 1/2 cup salsa (your favorite kind and heat level)
  • 2 tbs jalapeño, diced
  • 1 tbs taco seasoning
  • Garnish with chopped cilantro, diced red onion, sliced black olives, avocado slices, lime wedges, and/or salsa
  • Steps

    30 mins

  • Preheat oven to 350°.
  • Thoroughly mix all ingredients (only 1/2 of the cheese) in a mixing bowl.
  • Pour mixture into a 9×9 baking dish and top with remaining cheese. Place in preheated oven for 25 mins.
  • Remove from oven and let stand for at least 5 mins. Top with optional garnishes, serve and enjoy!

  • 2 or more large russet potatoes
  • Vegetable oil
  • Salt and pepper (optional)
  • Garlic powder (optional)
  • Steps

    40 mins

  • Preheat oven to 400° F.
  • Scrub and wash potatoes.
  • Cut potatoes in half and then into thick slices, about a half inch.
  • On a baking sheet pour a bit of vegetable oil to thinly cover the bottom of the baking sheet.
  • Place wedges on baking sheet in single layer.
  • Place in oven for about 15-20 minutes or until bottom of wedges are golden brown.
  • Turn wedges over and continue baking for about 10 minutes.
  • Add salt, pepper, garlic powder to taste and enjoy!
