Thai Basil & Calamansi Vodka Gimlet

2 cocktails

  • 1/4-1/3 cup Thai Basil Syrup
  • 1/4 cup vodka
  • 1/4-1/3 cup fresh squeezed calamansi juice
  • 1 cup ice
  • calamansi halves and fresh basil leaves for garnish
  • Steps

  • Combine all ingredients in a shaker and shake a few times.
  • If you don’t have a shaker, just combine everything in a high volume glass or pitcher and give it a few stirs. But you knew that already. I just didn’t want to sound all Alton Brown gadgety-like on you. 🙂
  • Serve on the rocks and garnish with a calamansi half and a sprig of fresh basil.

  • Easy Cheesy Baked Chicken alla Vodka

  • 1 lb boneless skinless chicken breast – cut to 1 inch cubes
  • 1 tbs unsalted butter
  • 2 tsp olive oil
  • 8 oz penne pasta
  • 1 jar vodka sauce (I used Bertolli)
  • 1 1/2 Shredded mozzerella
  • 1/4 cup grated parmesan
  • to taste salt and pepper
  • Steps

  • Preheat oven to 375°F. Bring a large pot of water to a boil. Add penne. Cook for 8 minutes. Drain when done and set aside.
  • While pasta cooks heat a 12 inch skillet over medium heat. Add butter and olive oil. As soon as butter is melted add chicken. Sprinkle with salt and pepper to preference. Cook, stirring occasionally, until chicken is cooked through.
  • Add vodka sauce and parmesan cheese to chicken in skillet. Stir to combine. Add penne. Gently stir to coat.
  • Spoon half of the pasta mixture into a 2 quart casserole dish. Top with half the mozzerella. Repeat layers. Bake uncovered 15 minutes or until cheese is melted and edges are bubbly.
  • Let rest 5 minutes. Serve with a side salad and/or garlic bread, and enjoy!

  • 1 1/2 oz vodka
  • 1/2 oz simple syrup (see recipe)
  • 1 oz fresh lemon juice
  • 2 oz Champagne, Moscato, Prosecco or other dry sparkling wine
  • 1 C ice cubes
  • 1 ea lemon twist
  • Steps

  • Combine all ingredients, except the lemon twist, into a shaker. Covor and Simple syrup recipe –
  • Cover and shake vigorously.
  • Add the wine and stir.
  • Strain into a glass. Garnish as desired (I like a lemon twist). Serve and enjoy!
  • Vodka Caramel Apple Cider

  • 2 oz Smirnoff "Kissed Caramel" VODKA
  • 6 oz Sparkling Cider
  • Steps

  • Chill Vodka in freezer for at least two hours.
  • Cider should be chilled as well.
