Baked Parmesan Chicken Recipe

6 chicken breasts
1 cùp light mayonaise or greek yogùrt (I ùsed ½ of each and it was delish!)
1/2 cùp parmesan cheese, and reserve more for top
1 1/2 tsp seasoning salt
1/2 tsp pepper
1 tsp garlic powder
Preheat the oven to 375 degrees and spray a 9×13 pan with cooking spray. Lay the chicken inside the pan. Mix together all ingredients. Spread the mixtùre evenly over each piece so that the chicken won’t dry oùt while baking. Sprinkle the top with fresh parmesan on the top of the chicken. Bake ùncovered for 45 minùtes. Enjoy!
Baked Sriracha Fried Chicken

4 – Chicken Thighs, bone-in, skin-on thighs, everyone loves that crispy skin, leave the skin on! Plus thighs are super juicy, what's not to love
1/4 cup- Light Soy Sauce, this will be for that sweet marinade it'll bring out the thighs flavour and tenderize then too (I don't know if that last bit's true, I just read it somewhere.)
1/4 cup- Sriracha apart from the chicken this is the real star of the show!
2 cups- Flour, all-purpose flour is good you could also use cornflower too for a bit more flavour
1 tbsp- Garlic Powder
1 tbsp- Ginger Powder
1 tbsp- Chicken Powder
1 tbsp- White Pepper
Firstly let’s start off by marinating the chicken. In a bowl or bag or whatever you want to use add the thighs, soy sauce and Sriracha sauce and get your hands in there and rub it all in making sure all the chicken is covered.
Cover marinaded chicken with cling film and leave for half an hour at the very least or overnight to really let that flavour sink in.
Once the chicken has marinaded for however long you want, it’ll be ready to fry! Before doing anything else put your oven on and set it to 180 degrees C preheat that sucker.
Now it’s time to flavour the flour. Into a bowl add the flour, garlic powder, ginger powder, chicken powder and white pepper into a bowl and whisk.
Get your baking tray or rack or whatever and line with foil or baking paper. You don’t have to do this but I just don’t like things sticking.
Throw your thighs into the flavoured flour one by one and make sure every bit of chicken is covered in flour. Make sure to shake off all excess flour you don’t want to end up baking it, then taking it out for there to be white spots on your thighs it’s not too appetising to look at.
After floured and the excess has been shaken off, put thighs onto rack or tray and bake. Bake for 10 minutes then flip over for another 10 minutes and flip over once more for another 10 minutes for an extra crispy top.
Take out the chicken and we’re done enjoy! Change
Baked Pizza ? Chicken Rollups

Chicken strips (several, baked)
Flour tortillas (as many as you need)
Spaghetti sauce (or pizza sauce if you have it)
Black pepper (sprinkle)
Garlic powder (sprinkle)
Mozzarella cheese (sprinkle)
Pepperoni (several slices)
Bake your chicken strips and set off to the side when they are done……. Change Change Change
On a large plate lay one flour tortilla, top that with 2 tablespoons of spaghetti sauce, then sprinkle some black pepper, oregano and garlic powder…….. Change Change Change
Sprinkle some mozzarella cheese on top of sauce……. Change Change
Now top that with some slices of pepperoni, you can add several slices or just a few, depends on how large your pepperoni slices are…….. Change Change
And lastly, place a chicken strip on top of all……. Change
Next tightly roll up your yummy flour tortilla and place inside baking pan that you used to bake your chicken strips……. Change Change
Continue until all chicken strips have been rolled up……. Change
Top with some extra spaghetti sauce…… Change
Cover and bake in a 350 degree oven for 30 minutes or until mozzarella cheese has melted inside…… Change Change Change
Serve with any extra sauce that you didn’t use up and enjoy !! Change
1 lb shredded cheese of choice, I used super sharp cheddars, white and yellow
1 onion, sliced thinly
2 tbsp flour
to taste Salt, pepper, onion and garlic powders per layer
1 cup water with a chicken bullion cube dissolved in it
Olive oil for browning chicken
Preheat oven to 350. Spray a large casserole dish with nonstick spray. Brown seasoned chicken in a skillet. Start layering potatoes, chicken and onions first then season. Add 1 tbsp flour over that and a layer of cheese. Do another layer the same way until everything is used, ending with cheese. Pour water over top.
Cover with foil that’s been sprayed with nonstick spray and bake for 30-40 minutes. Uncover and continue baking for another 30 or so minutes, til browned on top and the liquid has reduced. Allow to sit for a few minutes before eating it. Change
Baked Chicken Meatballs(low carb)

1 lb. ground chicken
Tsp. Garlic salt
Tsp. Black pepper
Fresh rosemary (a sprig) or 2 tsp. dried rosemary
1 raw egg for binding
1/2 cup grated Parmesan cheese (substitute bread crumbs if desired. I’m trying to avoid the carbs)
Try to drain the water out of the chicken as much as possible. It tends to retain a lot of moisture. Mix all ingredients together in a large bowl. Change
Form mixture into approximately 6 meatballs and place on a nonstick baking sheet, or spray with cooking spray. Change Change
Bake in a 350° F oven for about 45 minutes, or until internal temperature reaches 165°.
Serve over egg noodles, either plain or with a cream sauce!
