Sushi tuna and cucumber sandwiches

Ingredients

  • 185g can tuna in springwater, drained, flaked
  • 1/4 cup mayonnaise
  • 1 teaspoon lemon juice
  • 1 green onion, thinly sliced
  • 6 large slices high fibre white bread, crusts removed
  • 1/2 Lebanese cucumber, cut into ribbons
  • 1/2 avocado, thinly sliced

Method

  • Step 1
    Combine tuna, mayonnaise, lemon juice and onion in a bowl.
  • Step 2
    Place bread slices on a chopping board. Using a rolling pin, flatten bread slightly. Top with tuna mixture, cucumber and avocado. Roll up to enclose filling. Thickly slice each roll into 4 pieces. Wrap in plastic wrap and store in the fridge.

Prawn & cucumber sandwiches

Ingredients

  • 125g unsalted butter, softened
  • 2 tablespoons chopped dill
  • 1 tablespoon lemon juice
  • 8 large slices white bread
  • 1/2 telegraph cucumber, halved lengthways, thinly sliced
  • 12 large cooked prawns, peeled, de-veined, halved lengthways

Method

  • Step 1
    Place the butter, dill and lemon juice in a food processor and process until combined. Spread bread slices with dill butter. Using a 3cm round pastry cutter, cut 3 circles from each bread slice and place on a serving plate.
  • Step 2
    To assemble, place a cucumber slice and a prawn half on top of each round of bread, then season with sea salt and pepper.

Smoked salmon and cucumber sandwiches

Ingredients

  • 8 slices wholegrain bread
  • 100g spreadable cream cheese
  • 200g smoked salmon
  • 1 green cucumber, peeled, seeded, thinly sliced

Method

  • Step 1
    Place the bread on a clean surface and spread evenly with cream cheese. Top half the slices with smoked salmon and layer with cucumber slices. Sandwich together with remaining bread slices.
  • Step 2
    Use a serrated knife to remove and discard the crusts. Cut each diagonally into quarters. Place on a serving platter and serve immediately.

Ingredients

  • 2 Tip Top Sandwich Thins
  • 1 tablespoon garlic aioli
  • 100g sliced smoked salmon
  • 1 small Lebanese cucumber
  • 1/2 avocado, thinly sliced
  • 1 tablespoon chopped fresh dill

Method

  • Step 1
    Split sandwich thins in half. Spread 2 pieces with aioli. Top with salmon.
  • Step 2
    Grate cucumber or peel in long, thin strips, rotating the cucumber as you work to avoid the seeds.
  • Step 3
    Pile the cucumber on top of the salmon. Top with avocado and sprinkle with dill. Season with cracked black pepper. Cover with remaining pieces and serve.
