Healthy Shepherds Pie

Ingredients

4 servings

  • 1 lb ground turkey
  • 1 each cauliflower cut into florets
  • 2 cup frozen peas and carrots
  • 1 1/2 cup beef stock
  • 2 tbsp cornstarch
  • 4 tbsp chives chopped
  • 1/2 red onion sliced
  • 1 can't believe it's not butter spray
  • 1 tbsp olive oil, extra virgin
  • 3 clove garlic minced
  • 1 salt for cauliflower
  • Steps

  • Preheat oven to 400
  • Over medium high add oil, add ground turkey, onions cook until browned.
  • Add veggies and garlic, stir 5minutes.
  • Add cornstarch to beef stock, stir well. Add stock to meat mixture, stir until thickened. Set aside.
  • Bring medium pot of salted water to boil, add cauliflower, cook until tender.
  • With a potato masher, mashed cauliflower until smooth.
  • 8×8 dish spray with cooking spray, add meat mixture.
  • Spread cauliflower over meat mixture, spray with can’t believe it’s not butter.
  • Cook for 30 minutes until browned on top. Let cool for 20 minutes. Enjoy Change
  • Low Fat Pasta Carbonara

    Ingredients

    4 servings

  • 1 lb linguini
  • 6 oz turkey bacon, finely chopped
  • 3 clove garlic, minced
  • 2/3 cup dry white wine
  • 1 cup egg substitute
  • 1/3 cup fresh parsley, chopped
  • 1/3 cup grated Parmesan cheese
  • 1 pinch salt/pepper to taste

  • Cook pasta according to package directions. While pasta is cooking, cook the bacon and gain in a small saute plan over medium low heat until the garlic is aromatic and the bacon is holy browned, about 3-4 minutes.
  • Add the wine, increase heat, bring the wine to a boil and cook until it has reduced by about half. Pour the mixture into a large serving bowl and let it cool for 5 minutes. Stir in the egg substitute and the parsley.
  • When pasta is done, drain it well and add it immediately to the bacon mixture. Add Parmesan cheese and toss quickly. Season with salt and pepper and serve.
  • Zucchini Gratin (Low Carb)

  • 3 medium zucchini (18 oz.)
  • Ruth Ann's
  • 1 tbsp dried shallots
  • 1 1/2 cups Italian shredded cheese
  • 1/2 tsp roasted garlic powder
  • 1/2 cup heavy cream
  • Steps

  • Preheat oven to 375°. Spray round white casserole dish with Pam.
  • Slice zucchini 1/4″ on mandolin. Season zucchini liberally with Ruth Ann’s. Place 1/3 of the zucchini slices in the casserole dish and sprinkle with 1 tsp shallots and 1/2 cup of the cheese.
  • Repeat with remaining zucchini, shallots, and cheese.
  • Combine the heavy cream and the roasted garlic powder. Pour it over the top.
  • Bake for 40 minutes.
  • Vegan Shepherd's Pie

  • mashed potato layer
  • 4 medium russet potatoes
  • 1/4 cup butter
  • 1/2 cup milk
  • 2 clove garlic
  • bottom layer
  • 1 tbsp vegetable oil
  • 1 large onion
  • 3 cup mixed vegetables
  • 1 clove garlic
  • 1 cup hot chunky salsa
  • 1 packages yves ground round
  • Steps

    20 mins

  • Bring potatoes to a boil until tender – 25 min – and drain
  • Preheat oven to 400 and spray 2 qt baking dish with cooking spray
  • Heat vegetable oil in large skillet, stir in onion, mixed vegetables and salsa.
  • Crumble the veggie ground beef into skillet with vegetables – medium heat – about 10 min
  • Spread vegetarian meat into bottom of baking dish cover with mashed potatoes
  • Bake in preheated oven – about 20 min
  • Healthy-ish American Shepherd's Pie

    Ingredients

  • 2 head of Cauliflower
  • 1 tbsp Milk
  • 2 tbsp Butter
  • 2 lb Ground Turkey or Chicken
  • 1 Onion
  • 25 small Carrots, or so
  • Garlic (Powder or Fresh)
  • 2 tbsp Olive Oil
  • 1/2 cup Worcestershire Sauce
  • 1/2 can Beef or Chicken Broth
  • 1 cup Shredded Cheese (I tried Mozz this time.)
  • Salt and Pepper
  • 2 tablespoons flour
  • Steps

  • Start the cauliflower mash. Boil a pot of water then add cauliflower. Let cook approx 10-15 minutes, or until soft.
  • Start Meat. Sauté with oil: onion and carrots, then garlic. Add meat, and lightly brown. Add flour, then Worcestershire sauce and broth. Add salt and pepper as needed.
  • You can add green beans and corn to meat pan.
  • Drain cauliflower, add milk, butter and salt and pepper as needed. Blend in blender until reaches mashed potato -like consistency.
  • Grease 2-3 qt casserole dish. Add layer of meat, then layer of cheese, then cauliflower mash on top. Make sure cauliflower mash covers to the sides so meat does not boil out and cause a mess. Add a dash of paprika on top.
  • Bake at 400°F for 25-30 minutes. Let cool for 10 mins.
