Lee's Easy Salmon Patties (Cakes Croquettes)

Ingredients

  • 15 Ounce Can Salmon (well drained)
  • 1 Small Onion (fine diced)
  • 2 Celery Stalks (fine diced)
  • 1 2 Green Bell Pepper (fine diced)
  • 1/2 Cup Seasoned Bread Crumbs
  • 1 Egg Slightly Beatened
  • 3 Tablespoons Fresh Chopped Parsley
  • 3 Tablespoons Mayonnaise
  • 1 Tablespoon Dijon Mustard
  • 1 Tablespoon Worcester Sauce
  • 1 Teaspoon Seafood Seasoning (old bay)
  • 1/4 Teaspoon Black Pepper
  • 1 Sleeve Crushed Butter Crackers
  • 1/3 Cup Vegetable Oil
  • Steps

  • Drain salmon well. Pick through and discard any unwanted bones.
  • Sauté onion, bell pepper, and celery until soft. I use some butter and olive oil to do this.
  • Fold in the rest of ingredients, saving the cracker crumbs and vegetable oil for last. Shape into patty’s and coat the outside with the butter cracker crumbs. Cover and place in refrigerator for at least an hour to firm up If using dried parsley, 1 teaspoon is plenty.
  • Shallow fry in vegetable oil 4-5 minutes per side until golden brown. Enjoy. Note: These are best eaten hot and and fresh.

    Ingredients

  • 1 can pink salmon
  • to taste chopped onions
  • 1 tbsp flour
  • 1 teaspoon salt & pepper
  • 1 egg
  • Oil for frying
  • Steps

  • Mix everything well then, make little patties about 1 tbsp big.
  • Heat oil in pan then add patties. Cook till golden brown.

  • 3 cans salmon
  • 1-2 cups seasoned bread crumbs
  • 1 eggs
  • 1 tbs garlic powder
  • 1 tbs seasoning salt
  • 1 tbs onion powder
  • 2 tsp Cajun seasoning (depending on the amount of spice u want)
  • Steps

  • Drain and remove bones from salmon. Break up salmon evenly. Make sure there is no huge chunks
  • Add seasonings egg and breadcrumbs. Make sure mixture sicks together when rolled and pushed into patties.
  • In a skillet heat a couple of inches of oil. Placed formed patties in hot oil and brown on both sides

    Ingredients

    4 – 6 servings

  • 2 cans canned salmon
  • 1/2 cup crushed seasoned crackers or chips (your choice)
  • 1 egg
  • 1.5 cups cooking oil
  • 1 tablespoon crushed garlic
  • 1 dash garlic pepper seasoning
  • Steps

  • Combine crushed crackers, both cans of salmon and egg into a bowl. Mix thoroughly. Add crushed garlic and seasoning.
  • Heat oil in medium to large skillet.
  • Form small patties by hand and place in heated oil. Brown on each side.
  • Serve with tartar sauce.
  • Salmon Patties with Dill Sauce

    Ingredients

    7 servings

  • 2 tbsp butter
  • 3 tbsp flour (if use gluten-free will need to use a little less flour or a little more milk)
  • 1 1/4 cups milk, divided
  • 1 tsp cider vinegar
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 15 oz canned salmon, skinless & boneless
  • 5 1/2 oz potato chips, crushed
  • 1 cup vegetable oil
  • 1 can cream of celery soup
  • 1 tsp dried dill
  • Steps

  • Heat butter in saucepan until melted. Add flour, stirring until blended. Cook, stirring mixture continually, until bubbly. Stir in 1/4 cup milk & the vinegar. Cook white sauce, stirring continually, until thickened. If using gluten-free flour, will need to continue adding milk a little at a time til it is a thick sauce. Add salt & pepper, mix well. Remove from heat.
  • Drain salmon. Flake salmon & stir into white sauce.
  • Form salmon mixture into patties. Coat patties in crushed chips.
  • Heat oil in large skillet over medium-high heat. Fry patties in oil, turning once, until browned, drain.
  • For the dill sauce, combine the soup, 1 cup milk, & dill in small saucepan & mix well. Bring to a boil, stirring occasionally. Reduce heat. Simmer, stirring frequently, for 3 minutes. Serve with patties.

    Ingredients

  • 1 can salmon or mackerel
  • 3/4 cup crushed crackers. I prefer ritz
  • 2 eggs beaten
  • to taste Salt, pepper and onion powder
  • 6 small red potatoes cut in 1 inch cubes
  • 1 packet hidden valley ranch seasoning
  • Steps

  • I start by cubing potatoes and coating with oil then toss in ranch seasoning mix and put in the oven. Bake at 375 for 20-30 min flipping halfway through.
  • Then I remove any bones from the canned salmon or mackerel and combine with crushed crackers, eggs and seasoning. Shape into patties and fry until golden brown in a lightly oiled skillet.

    Ingredients

    3 servings

  • 15 Oz. Salmon or Tuna
  • 1/4 Cup Chopped Onions
  • 1/2 Cup Seasoned Bread Crumbs
  • 1 Egg
  • 1 Tbsp Olive Oil
  • Salt and Pepper to your liking
  • Steps

  • Shred the salmon or tuna (canned would work fine just be sure to drain first) then incorporate remaining ingredients in a medium bowl
  • Hand create the patties to your liking.
  • Lightly coat pan with olive oil and place over medium-low heat.
  • Cook both sides of the party until browned.
