Thai Sweet Chili Sauce Cucumber Salad

2 to 4 servings

  • 2 cups cucumber that's been cut into roughly 1/3" cubes (roughly 2 to 3 Persian/Lebanese cucumbers)
  • 1/4 small red onion, very thinly sliced on the vertical
  • 1/3 cup Thai sweet chili sauce
  • 1 Tablespoon fish sauce
  • 1 Tablespoon chili garlic sauce, sambal, or sriracha
  • 1-2 teaspoons fresh lime juice
  • chopped fresh Thai basil, mint, or cilantro

  • Put your cucumbers and onions in a large-ish bowl. Change
  • Add Thai sweet chili sauce, fish sauce, and lime. Change Change Change
  • Toss thoroughly, and, if you want some heat, add the chili garlic sauce/sambal/sriracha, and toss thoroughly again. Change Change Change
  • Add your fresh herb(s) of choice. Change
  • Let sit for 20 to 30 minutes to let the cucumber take up the dressing, tossing once or twice to make sure everything absorbs flavor evenly, and enjoy! Change
  • White Chicken Chili

  • 2-3 chicken breasts (depending on size)
  • 1 large onion, chopped
  • 3 garlic cloves, diced
  • 3 cans black beans (drain all cans)
  • 2 cans navy beans (drain only one)
  • 2 can diced green chili's
  • 32 oz box of chicken stock
  • Cayenne Pepper (3 palm fulls or to your liking)
  • Cumin (1 palm full up to 1/2 bottle)
  • Garlic Salt
  • Coriander (1 palm full)
  • Black Pepper
  • Sour Cream
  • Cilantro
  • Corn Tortillas
  • Olive Oil
  • Shredded Cheese
  • Steps

  • In a large pan, saute the onions & garlic in about 3 TBS of olive oil until the onions are clear. Change
  • Add the cayenne, coriander and cumin to the onions & garlic. Don’t worry, it will look a little dry. You can add a little more olive oil if you’d like.
  • Push the onion & garlic to the side & add the cubed chicken. Sprinkle the garlic salt & black pepper to the chicken only. Cook until the chicken is done. Change
  • Add the two cans of drained green chili’s and mix together. Add some chicken stock (about 1/2 the box) & let simmer. Change
  • If cooking in the same pot, add all of the beans. Make sure you drained all of the black beans & only one can of the navy. (I make mine in the crock pot sometimes so I have my beans waiting & just transfer the mixture over) Change
  • Add the rest of the chicken stock & bring to a boil (if doing on the stove). Reduce to low heat & let sit until ready to eat. If doing in a crock pot, I put mine on whatever time I need it to be ready.
  • When you are ready to eat, fry up some corn tortillas in oil. Sprinkle them with some salt and set aside. Cook as many as desired.
  • Top with sour cream, cilantro, cheese. Many people rip up the tortillas & mix it up in the chili. Others dip & some just eat the tortilla on the side. Change

  • 1 cup chopped poblano peppers
  • 1-4 chopped serrano peppers (depending on the desired heat)
  • 1 small white onion, chopped
  • 3 cloves garlic
  • 1 tbsp butter
  • 1 cup chicken stock
  • 1 cup beer (I prefer dark beer like Modelo Negro or similar)
  • 2 tsp cumin
  • 1.5 tbsp chili powder
  • 1/2 tsp black pepper
  • to taste Salt
  • 1 lb smoked brisket, chopped
  • Juice from half of a lime
  • 1 (15 oz) can crushed tomatoes
  • 1 (15 oz) can pinto beans, drained
  • 2 tsp corn flour or masa flour
  • Garnish (Optional)
  • Monterey-Jack cheese
  • Sour cream
  • Chopped cilantro
  • Pico de gallo
  • Lime wedges

  • Steps

  • Heat butter over medium heat in a 6 quart pot and add the onion, peppers and garlic. Cook for around 5 minutes, stirring often.
  • Add the beer, chicken stock, dry spices, lime juice, brisket, tomatoes and beans. Stir in the corn flower and let simmer for 20 minutes.
  • Ladle into bowls and garnish as desired.

  • 1 tablespoon salt
  • 1 tablespoon sugar
  • 1 Hollandaise Onion (dice chop)

  • Heat a oil in a pan
  • Put onion, and minced beef
  • Add cayenne pepper, turmeric, black pepper, Italian Herbs, Curry powder, salt and sugar.
  • Add 1 can, of baked beans. cook throughly. DONE
