Vodka with crushed lime & mint

Ingredients

  • 55g (1/4 cup, firmly packed) brown sugar
  • 24 fresh mint leaves
  • 3 limes, quartered
  • 180ml vodka
  • Soda water, chilled, to serve
  • Ice cubes, to serve

Method

  • Step 1
    Divide the sugar, mint and lime among serving glasses. Use the end of a rolling pin to gently pound until lime is crushed.
  • Step 2
    Pour vodka among glasses. Top with soda water and ice. Serve.

Vodka & lime crush

Ingredients

  • 70g (1/3 cup) caster sugar
  • 4 limes, cut into wedges
  • 160ml (2/3 cup) vodka, chilled
  • Crushed ice, to serve
  • Chilled lemonade, to serve

Method

  • Step 1
    Place the sugar and lime wedges in a mortar and pound with a pestle until the lime is crushed. Add the vodka and ice and pound until combined.
  • Step 2
    Divide among serving glasses. Pour over the lemonade and serve.

Strawberry vodka cup

Ingredients

  • 1kg strawberries, hulled, plus sliced berries to serve
  • 1/2 cup (125ml) white balsamic condiment (from supermarkets)
  • 1 cup (220g) caster sugar
  • 200ml vodka (or more if you like)
  • 1L (4 cups) soda water
  • Ice cubes, to serve
  • Mint leaves, to serve

Method

  • Step 1
    Roughly chop berries in a food processor, then transfer to a bowl with vinegar. Cover and chill for at least 4 hours or overnight.
  • Step 2
    Strain through a fine seive over a bowl, stirring to allow the liquid to drip through until you have about 1 cup (250ml) liquid. Simmer liquid and sugar in a pan over medium heat for 5 minutes until reduced slightly. Cool syrup in fridge. To serve, pour syrup into a tall jug, add vodka, ice and soda, then garnish with mint and berries.
