Pink vodka cocktail

Ingredients

  • 160ml triple sec liqueur
  • 160ml good-quality vodka
  • 2 tablespoons good-quality grenadine

Method

  • Step 1
    Combine the triple sec and vodka in a jug. Divide the mixture among eight 60ml (1/4-cup) capacity glasses.
  • Step 2
    Gradually add 1 teaspoon of grenadine to the centre of each glass so the grenadine sinks to the bottom of the glass. Serve immediately.

Ingredients

  • 180ml vodka
  • 90ml Midori liqueur
  • Ice cubes, to serve
  • Chilled pineapple juice, to serve

Method

  • Step 1
    Divide the vodka, Midori and ice among serving glasses. Top with pineapple juice.

Frozen mango and vodka cocktails

Ingredients

  • 4 large mangoes, peeled, flesh chopped
  • 125ml (1/2 cup) water
  • 80g (1/2 cup, firmly packed) finely chopped palm sugar
  • 240g (2 punnets) raspberries
  • 500ml (2 cups) vodka

Method

  • Step 1
    Spread chopped mango over a tray. Place in freezer for 3 hours or until frozen.
  • Step 2
    Meanwhile, combine the water and sugar in a medium saucepan over low heat. Cook, stirring, for 2 minutes or until sugar dissolves. Increase heat to medium-high and bring to the boil. Boil, uncovered, for 5 minutes or until liquid reduces by one-third (see microwave tip). Remove from heat and set aside for 10 minutes to cool slightly.
  • Step 3
    Place raspberries and sugar mixture in the jug of a blender and blend until smooth.
  • Step 4
    Place half the frozen mango and vodka in the jug of a blender and blend until smooth. Transfer to a large jug. Repeat with remaining mango and vodka.
  • Step 5
    To serve, layer the mango and raspberry purees among serving glasses and serve immediately.

Mandarin caprioska

Ingredients

  • 4 mandarins, unpeeled, cut into 8 wedges
  • 1 tablespoon caster sugar
  • 1 cup crushed ice
  • 250ml (1 cup) chilled mandarin-flavoured vodka
  • 250ml (1 cup) chilled pink-grapefruit juice

Method

  • Step 1
    Place the mandarin and sugar in a mortar and pound with a pestle until mandarin is crushed. (Alternatively, place mandarin in a plastic bowl and pound with the end of a rolling pin.)
  • Step 2
    Spoon the mandarin mixture evenly among serving glasses. Top with ice. Pour over the vodka and grapefruit juice. Serve immediately.
