Strawberry cheesecake french toast

Ingredients

  • 3 eggs
  • 1/4 cup milk
  • 1/2 cup pouring cream
  • 250g strawberries, hulled, coarsely chopped
  • 1/4 cup caster sugar
  • 200g brioche loaf
  • 30g unsalted butter, chopped
  • 125g spreadable cream cheese

Method

  • Step 1
    Combine cream cheese, 1 tbs caster sugar and one-third of the strawberries in a bowl. Cut brioche into 8 slices. Spread half the slices with the mixture, leaving a 1cm border around edges. Top with remaining brioche slices.
  • Step 2
    Combine remaining caster sugar and strawberries with 125ml (1 ⁄2 cup) water in a small saucepan. Stir over medium heat for about 10 minutes or until sugar has melted and strawberries break down and form a sauce. Remove from heat. Set aside to cool slightly.
  • Step 3
    Meanwhile, whisk together eggs, milk and cream in a large bowl. Place brioche sandwiches in a shallow baking dish large enough to hold them in a single layer. Pour egg mixture over sandwiches. Set aside for about 2 minutes to soak. Carefully turn over sandwiches and soak for a further 2 minutes or until the mixture is absorbed.
  • Step 4
    Melt half the butter in a large non- stick frying pan over medium heat until bubbling. Cook sandwiches, in 2 batches, for 2-3 minutes each side or until golden brown. Keep warm. Repeat with remaining butter and sandwiches.
  • Step 5
    Slice the sandwiches and serve with strawberry sauce and a dusting of icing sugar, if you like.

 

Crumpet French toast with Nutella

Ingredients

  • 1 cup (150g) frozen raspberries
  • 2 tbs caster sugar
  • 2 Coles Australian Free Range Eggs, lightly whisked
  • 1/3 cup (80ml) milk
  • 10g butter
  • 6 crumpets
  • 90g Nutella
  • 1/4 cup (70g) vanilla-flavoured Greek-style yoghurt
  • Mixed berries, to serve

Method

  • Step 1
    Combine raspberries, sugar and 2 tsp water in a saucepan over low heat. Cook, stirring, for 2 mins or until sugar dissolves. Increase heat to high. Bring to the boil. Cook for 1 min or until mixture thickens. Strain through a fine sieve into a heatproof bowl. Discard solids. Cool.
  • Step 2
    Place the egg and milk in a large shallow bowl and whisk to combine.
  • Step 3
    Melt half the butter in a large frying pan over medium-low heat. Dip half the crumpets in egg mixture for 20 secs. Transfer to the pan. Cook for 1-2 mins each side or until cooked through. Transfer to serving plates. Wipe pan clean. Repeat with the remaining butter, crumpets and egg mixture.
  • Step 4
    Spread each crumpet French toast with 1 tbs of Nutella. Top with yoghurt, raspberry sauce and mixed berries.

 

Banoffee french toast

Ingredients

  • 1/2 cup (125ml) milk
  • 2 Coles Australian Free Range Eggs, lightly whisked
  • 1 tsp vanilla extract
  • 40g unsalted butter, chopped
  • 4 Coles Banana Bread Slices
  • 1/2 cup (125ml) pouring (pure) cream or thickened cream, whipped
  • 2 bananas, thickly sliced
  • Violet Crumble chocolate bar, chopped, to serve
  • Coles Salted Caramel Topping, to serve

Method

  • Step 1
    Whisk milk, egg and vanilla in a large shallow bowl. Melt half the butter in a large frying pan over medium-low heat.
  • Step 2
    Place 2 slices of banana bread in the egg mixture and turn to coat. Allow to soak for 20 secs. Transfer to the frying pan and cook for 1-2 mins each side or until golden brown and heated through. Transfer to a plate and cover to keep warm. Wipe the pan clean. Repeat with the remaining butter, banana bread and egg mixture.
  • Step 3
    Divide banana bread evenly among serving plates. Spoon the whipped cream evenly over banana bread. Top with banana. Sprinkle with chocolate bar and drizzle with caramel topping.

 

Tahini and avocado toast with dukkah

Ingredients

  • 2 tsp tahini
  • 40g wholemeal sandwich thin, toasted
  • 1/2 avocado, thinly sliced
  • 1 tsp dukkah

Method

  • Step 1
    Spread tahini over sandwich thin base and lid. Top with avocado and sprinkle with dukkah to serve.
